No-knead Bread

Satu resep no-knead bread bisa jadi dua macam roti: buat yang suka manis dan yang suka anyep. Everybody's happy 💆 Bahan: 120 ml air hangat 1 sdt ragi instan 2 sdm minyak sayur 2 sdm madu/gula 1 btr telur 250 g terigu protein tinggi plus ekstra 1/2 sdt garam Opsional: bahan olesan, aduk rata: 100 g mentega/margarin 100 g gula palem 1/4 sdt garam 1 sdt kayumanis bubuk Cara membuat: Tempatkan air hangat di mangkuk. Taburkan ragi ke permukaan air, biarkan sebentar. Masukkan minyak dan madu/gula, aduk hingga larut. Masukkan telur, aduk rata. Masukkan terigu dan garam, aduk hingga butiran terigu tidak terlihat lagi. Adonan akan terlihat lembap dan berantakan. Tutup serbet, biarkan di tempat hangat selama 2 jam. Taburkan terigu di permukaan adonan, kempiskan. Balik2 adonan beberapa kali hingga mulus. Tambahkan terigu bila masih sangat lengket. Rustic No-Knead Bread

Rustic No-Knead Bread Bahan: 105 ml air hangat 1 sdt ragi 3 sdm madu 1 sdm minyak sayur 1 butir telur 210 g terigu protein tinggi 1/4 sdt garam Ekstra terigu secukupnya Cara membuat: Siapkan wadah ukuran sedang. Tuang air hangat, taburi ragi di atasnya. Diamkan sejenak. Masukkan madu, minyak, dan telur, aduk rata. Masukkan terigu, aduk rata. Masukkan garam, aduk hingga semua bahan tercampur rata. Tutup kain, diamkan di tempat hangat selama 2 jam atau masukkan kulkas semalaman (adonan dari kulkas harus dibiarkan dulu hingga mencapai suhu ruang sebelum diolah). Taburi terigu ke permukaan adonan, balikkan beberapa kali hingga rata dan tidak terlalu lengket di tangan. Letakkan di loyang beroles minyak/mentega. Diamkan setengah jam. Panaskan oven 180-200 C. Panggang adonan hingga matang dan kecokelatan.

Honey Buttermilk Pancake

Honey Buttermilk Pancake Bahan: 1 cup terigu 1 sdt baking powder 1/2 sdt garam 1 butir telur 3 sdm madu 150 ml susu cair + perasan 1 butir jeruk nipis 2 sdm minyak sayur Topping sesuai selera (saya beri irisan apel dan taburan gula palem) Cara membuat: Aduk terigu, baking powder, garam. Sisihkan. Kocok lepas telur, masukkan madu dan susu+ jeruk nipis, aduk hingga larut. Masukkan minyak, aduk rata. Tuang cairan ini ke tepung secara bertahap, aduk hingga lembut. Tuang sesendok adonan ke wajan yang telah dipanaskan (saya bikin ukuran mini dengan 1 sdm adonan). Bisa ditambahkan topping bila suka (buah, cokelat, keju, dll), polos pun sudah enak. Balikkan, masak hingga kedua sisi kecokelatan. Hidangkan dengan tambahan olesan madu bila suka.

Quick Cream Cheese Biscuits

Masih males nyalain oven tapi pengen bikin roti-rotian buat sarapan. Yuklah bikin biscuit, panggang di teflon! Biscuit di sini bukan kue kering, lebih mirip roti. Resepnya saya adaptasi dari resep2 "cream cheese biscuit" yang bertebaran di internet. Silakan dimodifikasi sesuai keinginan hati ya. Quick Cream Cheese Biscuits Bahan: 150 gram terigu 1/2 sdt baking soda 1/4 sdt garam 80 gram cream cheese 1 sdm minyak sayur Susu secukupnya Optional, but good : 1 sdt oregano atau herbs lainnya 1/2 sdt paprika bubuk Keju cheddar parut Mozzarella untuk isian Cara membuat: Aduk semua bahan kering, plus herbs dan keju parut bila pakai. Masukkan cream cheese dan minyak, aduk dengan garpu hingga berbutir. Masukkan susu sedikit2 sambil diaduk dengan tangan hingga adonan bisa dibulatkan. Gilas tipis adonan, cetak bulat2 atau sesuai selera. Kalau saya, dipotong kotak2, lalu 2 buah kotak disatukan dengan potongan mozzarella di dalamnya. How to fix  Quick Breakfast   (or snack, or   bekel ) from limited ingredients 😋 Flatbread Bahan 115 gram terigu* 1 sdt baking powder 1/4 sdt garam 30 gram mentega/margarin 4 sdm air/susu Cara membuat Campur terigu, baking powder, dan garam di mangkuk. Tambahkan mentega, aduk hingga berbutir. Masukkan air/susu, aduk hingga menjadi adonan lembut. Bagi adonan menjadi 2-4 bagian, bulatkan dan tipiskan. Panggang di teflon dengan api kecil hingga kedua sisi matang dan kecokelatan. Beri topping** sesuai selera. *Bisa gunakan terigu jenis apa saja, namun makin tinggi kandungan proteinnya makin empuk hasilnya. **Bisa topping manis seperti isian roti pada umumnya (selai, cokelat, irisan buah) atau topping asin seperti pizza (saus tomat, keju, sosis).

Cemilan dari Roti Tawar

Punya sisa roti tawar? Bikin cemilan buat nyeneng-nyenengin anak yuk! Caranya giling tipis roti tawar, potong panjang-panjang. Panggang suhu rendah sampai kering (bisa pakai teflon, ditutup, api kecil). Cairkan cokelat, oleskan di atas roti, taburi sprinkle.  Selesai!

Homemade Burger Buns

Sumber:  kingarthurflour.com Bahan: 170 ml air hangat 28 g mentega/minyak 1 btr telur 420 g terigu protein tinggi 35 g gula 1 sdt garam 1 sdm ragi instan Topping: 45 g mentega, lelehkan Herbs/biji2an (opsional) Cara membuat: Campur semua bahan adonan, uleni hingga kalis dan lembut. Boleh menambahkan sedikit air jika adonan terlalu kering. Bulatkan adonan, tutup serbet, biarkan mengembang 2 kali lipat (1-2 jam). Kempiskan adonan, bagi jadi 8. Bulatkan masing2 bagian, tekan sedikit hingga berbentuk setengah bola. Tempatkan di loyang beroles mentega/minyak, tutup serbet, biarkan mengembang lagi (1 jam). Oles permukaannya dengan sebagian mentega leleh, taburi basil/oregano kering bila suka. Panggang suhu 180 C hingga keemasan. Angkat, olesi lagi dengan mentega leleh.

Honey-Cheese-Banana Pancake

Sarapan bocah pagi ini: Pancake Pisang Keju Madu, brokoli rebus, plus jus semangka+jeruk nipis+selada. Nggak nyambung? Yang penting anaknya doyan 😄😄😄 Bahan: 3/4 cup terigu 1/4 cup wholemeal 1/2 sdt baking soda 1/2 sdt garam 1 btr telur 150 ml buttermilk (susu+sedikit perasan jeruk nipis) 1 sdm madu 2 sdm minyak sayur Pelengkap: Pisang, iris2 Keju parut Madu Cara membuat: Campur terigu, wholemeal, baking soda, garam, sisihkan. Kocok lepas telur, tambahkan buttermilk, madu, minyak, aduk rata. Tuang ke terigu secara bertahap sambil diaduk hingga rata. Panaskan wajan, beri sedikit minyak. Tuang adonan secukupnya, beri irisan pisang dan keju parut. Tunggu sampai muncul gelembung di permukaan adonan, balikkan. Masak hingga kecokelatan. Sajikan hangat dengan siraman madu.

Banana Cake

Udah lama nggak bikin Banana Cake. Resep ini bisa dimodif sesuka hati. Bisa pakai gula apapun atau madu, takarannya bebas, nggak perlu banyak-banyak kalau pisangnya udah mateng banget. Paling enak pakai pisang ambon lumut yg udah kematengan. Pasti jadinya manis dan wangi. Isiannya juga bebas, bisa chocochips, kacang2an, biji2an, buah kering, atau rolled oat biar berserat. Yuk bikin! Bahan: 1 cup terigu 1/4 cup whole meal (bisa diganti terigu) 1/2 sdt kayumanis bubuk 1/2 sdt baking soda 1/4 sdt garam 1/2 cup minyak atau mentega leleh 1/4 cup madu 2 butir telur 1 cup pisang lumat (kurang lebih 4 buah) 1/2 cup isian (optional) Cara membuat: Campur terigu, whole meal, kayumanis, baking soda, garam hingga rata. Sisihkan. Aduk minyak dan madu hingga tercampur. Masukkan telur satu persatu, aduk rata. Tambahkan pisang lumat, aduk rata. Masukkan campuran tepung secara bertahap dan isian, aduk rata. Making Homemade Flour Tortillas then having Salsa Chicken Wraps for lunch Flour Tortillas Bahan: 200 gram terigu serbaguna 1 sdt baking powder 1/2 sdt garam 30 gram shortening 2 sdm minyak sayur 120 ml air panas Cara membuat: Aduk terigu, baking powder, dan garam. Tambahkan shortening dan minyak sayur, aduk hingga berbutir. Tuang air panas, uleni sampai kalis. Tambahkan terigu bila dirasa terlalu lengket. Bagi adonan jadi 8 bulatan, tutup kain, istirahatkan sementara menyiapkan isian. Gilas masing2 bulatan setipis mungkin. Panaskan wajan datar, taruh 1 lembar tortilla. Masak hingga kecokelatan, balikkan. Masak hingga kedua sisi matang. Beri isian sesuai selera, gulung. Untuk salsa chicken wraps, isiannya saya pakai selada, dada ayam tumis, homemade salsa, lada hitam, dan cincangan daun ketumbar.

Bread (or Cake) Pudding

Karena angel food cake kenyal-kenyal yang dibikin kemarin nggak ada yang ngabisin *cry* jadi mikir gimana ya supaya jadi empuk? Ah dibikin Bread Pudding aja! Tentunya roti diganti sama potongan angel food cake. Hasilnya lembut, wangi, dimakan anget2 atau dingin dari kulkas beda sensasinya tapi sama enaknya. Apalagi kalau pakai es krim vanilla! Bread Pudding Bahan*: 250 gram roti (diganti cake), potong-potong 100 gram mentega, lelehkan 600 ml susu (lebih enak pakai susu evaporated) 2 telur 4 kuning telur** 100 gram gula 100 gram kismis Cinnamon untuk taburan Optional: pisang, dipotong kecil2 *satu resep untuk 1 loyang, dua layer roti. Saya bikin 2 loyang masing2 satu layer. **saya hanya pakai 2 kuning telur, tapi di susunya ditambahkan 50 gram bubuk puding instan. Cara membuat: Susun roti di loyang beroles margarin. Sticky Caramel Cashew Cinnamon Rolls

Homemade Cinnamon Rolls.  T aste better than any store bought ones. Because it's HOMEMADE. No contest. Sticky Caramel Cashew Cinnamon Rolls   adapted from  http://steamykitchen.com/248-caramelroll.html Ingredients: 250-300 grams bread flour 1/2 tbsp instant yeast 140 ml warm water 3 tbsp honey 3 tbsp vegetable oil or melted unsalted butter 1/2 tsp salt Fillings: 85 grams butter/margarine 85 gram palm sugar 1/4 sdt salt 1/2 sdt cinnamon 50 grams roasted cashew, coarsely chopped. Methods: In a large bowl mix together 250 grams flour and instant yeast. In a small bowl mix warm water, honey, and oil or melted butter. Pour the mixture into flour mixture, stir with a wooden spoon until combined and moistened.  Cover the bowl with a clean napkin/towel, let it rest in warm environment until nearly doubled in size. Punch the dough, add salt, knead a little until smooth and elastic. Add more flour if the dough feel sticky to the hand. Preheat oven...

My Favorite Banana Cake

Yields: 2 medium loaf pans or 18 cm round pans. Ingredients : 1 cup vegetable oil 120-150 grams coconut sugar (or to your taste), finely grated/chopped 4 eggs 2 cups mashed banana (from about 8 medium size bananas) 2 1/2 cups flour 1 tsp baking soda 1/4 tsp salt 1/2 tsp cinnamon Methods : Preheat oven to 180 C. In a large bowl stir oil and sugar together (I use a spatula). Add eggs one by one, mixing along. Add mashed banana, mix until combined. In another bowl mix together flour, baking soda, salt, and cinnamon. Stir in the flour mixture into the batter gradually, just until combined. Do not over mix. Pour the batter into greased/buttered pans. Bake until golden brown and a toothpick inserted into the middle of the cake comes out clean. Best served warm.

Ice Cream Bread

I'm so glad I found this recipe! It's a bread that is made of ice cream. Yes! And it's so easy to make. It's a great option to use up left over ice cream that has been piled up in our freezer at  RockyBars  kitchen. And think about the variations! The taste would depend on the ice cream you use. I used chocolate-chip ice cream. As I'm writing this I'm thinking about strawberry-cheesecake-cookie-dough ice cream. Yummm. Pao De Queijo

Pao De Queijo is often called Brazilian Cheese Bun, although in my opinion they are quite similar to choux rather than buns. The methods are also similar, add the eggs gradually to prevent the batter becoming too thin. Many recipes use cassava flour, but others find using sago flour would result in better taste and texture. Pao De Queijo Source: Ade Sjarif Murtadho, from NCC Indonesia mailing list Ingredients: 220 grams sago flour 186 grams milk 70 grams butter 95 grams parmesan 2 eggs, lightly beaten 3 grams salt Methods: Preheat oven to 190 Celsius. Bread-Making Madness #2: Buns

#BakingWithKid. Did you know that children are good at kneading bread dough? Just give them a try. Let them pinch it, punch it, turn it over, slam it, press and squeeze it, as much as they like. When they're done, the dough are done too!  Recipe is from the back of the instant-yeast box. A great and foolproof one. Will post it here sometime in the future.
