My Favorite Banana Cake

Yields: 2 medium loaf pans or 18 cm round pans. Ingredients : 1 cup vegetable oil 120-150 grams coconut sugar (or to your taste), finely grated/chopped 4 eggs 2 cups mashed banana (from about 8 medium size bananas) 2 1/2 cups flour 1 tsp baking soda 1/4 tsp salt 1/2 tsp cinnamon Methods : Preheat oven to 180 C. In a large bowl stir oil and sugar together (I use a spatula). Add eggs one by one, mixing along. Add mashed banana, mix until combined. In another bowl mix together flour, baking soda, salt, and cinnamon. Stir in the flour mixture into the batter gradually, just until combined. Do not over mix. Pour the batter into greased/buttered pans. Bake until golden brown and a toothpick inserted into the middle of the cake comes out clean. Best served warm.

Chocolate-chip Scones

Source: Sally's Baking Addiction Ingredients: 2 cups flour 1/2 cup light palm sugar 2 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1/2 cup butter, frozen 1/2 cup heavy cream 1 large egg 1 heaping cup chocolate chips optional: additional chocolate chips, coarse sugar and confectioners' sugar for sprinkling Methods : Preheat oven to 200 C. Combine flour, sugar, baking powder, cinnamon, and salt together in a large bowl. Grate the frozen butter into the flour mixture, mix it with pastry cutter or the tip of your fingers until the mixture resembles coarse meal. In another bowl whisk the egg and cream together. Drizzle it over the flour mixture then stir everything together until moistened. Stir in chocolate chips, but don't over mix the dough. With floured hands, shape the dough into a ball. Ice Cream Bread

I'm so glad I found this recipe! It's a bread that is made of ice cream. Yes! And it's so easy to make. It's a great option to use up left over ice cream that has been piled up in our freezer at  RockyBars  kitchen. And think about the variations! The taste would depend on the ice cream you use. I used chocolate-chip ice cream. As I'm writing this I'm thinking about strawberry-cheesecake-cookie-dough ice cream. Yummm. Marshmallow Bahan: 1,25 cup gula pasir 2 sdm gelatin bubuk 1 cup air 0.5 sdt cream of tartar margarin untuk olesan maizena untuk taburan Peralatan: cup dan sendok pengukur, panci, sendok, kompor, mikser, wadah/loyang lebar Persiapan: Siapkan wadah atau loyang lebar. Olesi alas dan pinggir bagian dalamnya dengan margarin. Taburkan maizena ke seluruh permukaan bagian dalam wadah/loyang hingga rata. Cara Membuat: Aduk gula pasir, gelatin, dan air dalam panci. Masak di atas kompor sambil diaduk hingga mendidih. Kecilkan api, teruskan masak sampai larutan agak mengental, sekitar 5 menit. Angkat. Kocok dengan mikser hingga berbusa.  Tambahkan cream of tartar, lanjutkan mengocok hingga putih, mengembang, dan sangat kental. Tuang ke dalam wadah, ratakan, taburi dengan maizena. Biarkan semalaman di suhu ruang hingga mengeras, lalu potong-potong/cetak sesuka hati.

Finnish Pulla Source: Allrecipes.com Ingredients: 1/4 cup lukewarm water 5-6 grams instant yeast (about half the sachet) 1 cup lukewarm milk 1/2 cup sugar 1/2 tsp ground cardamom 2 eggs, beaten 4 1/2 cups bread flour 1/2 tsp salt 1/4 cup butter/margarine, melted 1 egg or just the yolk for egg wash 1 tbsp sugar for sprinkle Methods: Dissolve the yeast in the lukewarm water. Stir in the lukewarm milk, sugar, cardamom, eggs, and 1 cup of the flour. Beat until smooth. Add about 1 1/2 cup of the flour, beat well until smooth and glossy in appearance. Add salt and melted butter/margarine, beat well. Stir in the remaining flour until the dough is stiff. Turn the dough out of bowl onto a floured surface, cover with the inverted bowl. Let rest for 15 minutes. Knead the dough until smooth and satiny. Place in a lightly greased bowl, turn the dough around to grease all over the surface.  Cover with clean dishtowel, let rise in a warm plac
