Lemon Cupcakes with Lemon Custard Filling 🍋 Waktu diminta bikin cupcakes sama  @ytanyadji  saya langsung was-was, mana bisa saya bikin cupcakes cantik, buat pendamping wedding cake lagi! Tapi ternyata saya cuma perlu siapin base cupcakes, custard filling, sama buttercream-nya secara terpisah, nanti doi yang assembly jadi cupcakes cantik. Fiuh, aman! 😂 Makasih ya  @ytanyadji  untuk kesempatan latihan bikin cupcakes 100 biji dan bisa liat langsung Master Baker-nya  @mamatokokue  menghias kue (itu hiasan bunga2 daun2-nya handmade lho btw! Wedding cake-nya pun dibuat detail banget!) I really enjoy making those cupcakes 😊😋💕 Diadaptasi dari Martha Stewart's Cupcakes (dimodifikasi supaya hasilnya lebih ringan dan empuk) Hasil 40-45 mini cupcakes Bahan cupcakes: 400 g butter suhu ruang (saya ganti sepertiganya dengan minyak sayur) 400 g gula pasir 225 g cream cheese (saya ganti setengahnya dengan plain yogurt) 7 butir telur 2 sdm parutan kulit lemon...

Chocolate Pound Cake

Enjoying cupcakes with a view. No frosting needed! Pound cake paling cocok dibawa piknik. Rasa dan bentuknya nggak berubah walau dibawa perjalanan jauh. Apalagi kalau dibuat ukuran kecil (pakai loyang muffin), lebih ringkes! Chocolate Pound Cake Bahan: 200 g terigu 30 g cokelat bubuk 1 sdt baking soda 1/2 sdt garam 200 g mentega 200 g gula pasir/palem 3 btr telur 180 ml buttermilk (susu cair + perasan lemon) Cara membuat: Campur terigu, cokelat bubuk, baking soda, dan garam. Sisihkan. Kocok mentega dan gula hingga pucat dan mengembang. Masukkan telur satu persatu sambil dikocok rata. Masukkan campuran tepung bergantian dengan buttermilk, aduk rata. Terakhir kocok adonan 30 detik. Tuang ke dalam loyang loaf (saya pakai loyang muffin), panggang suhu 170 C hingga matang (tes tusuk). Enak dimakan hangat atau dingin atau dijadikan dasar untuk cake berfrosting.

Toffee Coffee Cupcakes Ingredients: 240 grams flour 1 tsp baking soda 1 tsp salt 240 grams margarine/butter 200 grams palm sugar 2 tbsp instant coffee powder 3 eggs 230 grams plain yogurt Frosting: 300-400 grams non dairy cream confectioners' sugar optional: mocha paste Methods: Preheat oven to 180 Celsius. In a medium bowl sift together flour, baking soda, and salt. Set aside. In a large bowl cream margarine/butter, palm sugar, and coffee powder until light and fluffy. Add eggs one by one, mix well after each addition. Gradually stir in yogurt and flour mixture alternately until just combined. Spoon or pipe the batter into cupcake tins lined with cupcake papers, about 2/3 full. Bake in the preheated oven until well risen and a toothpick inserted into the middle of the cake comes out clean. #BakingWithKids: Green Tea Cupcakes

Last Tuesday our kitchen is visited by @maknyes and @perempuangimbal along with their kids. We were going to make cupcakes together, yay! Could you imagine what it was like to do baking with three kids around? A three month-old and a less-than-1-year-and-a-half babies (and their moms have to carry them along on the whole baking process) plus a preschooler who wouldn't stop shouting something like, "I wanna do that! Can I do that? Can I try that? I can do that by myself!"  So here we are, the chaotic bakers who somehow manage to accomplish the impossible mission of baking green tea cupcakes with kids tagging along.   The first try. This is what happen when I let my preschooler do the frosting. Messy! Those first 12 mini cupcakes (for each person) are gone in considerably short period of time. Chocolate Cupcakes With Vanilla Frosting

Nothing very special about this post, just ordinary chocolate cupcakes with ordinary frosting. I just want to keep notes about the chocolate cake recipe. It is adapted from Smitten Kitchen's Everyday Chocolate Cake . That recipe is a keeper, the cake is tender, moist, but not too soggy. Definitely will frequently use it for any need of chocolate cake.
