Chocolate Muffins

Diadaptasi dari allrecipes.com Untuk 12 muffin atau 24 mini muffin Bahan: 240 g terigu 100 g gula palem 60 g cokelat bubuk 1 sdt baking soda 1/2 sdt garam 100 g cokelat blok, potong-potong 1 btr telur 225 g yogurt plain 120 ml susu cair 120 g butter leleh atau minyak sayur Cokelat untuk topping atau sesuai selera Cara membuat: Aduk rata terigu, gula, cokelat bubuk, baking soda, garam, dan cokelat potong di mangkuk. Sisihkan. Di wadah lain kocok lepas telur, tambahkan berturut-turut yogurt, susu, dan butter leleh sambil diaduk rata. Tuang adonan cair ke campuran tepung, aduk hingga menjadi adonan basah. Jangan kebanyakan mengaduk. Sendokan ke loyang muffin yg dilapisi papercup. Beri topping, panggang suhu 180 C hingga matang, 20-25 menit (tes tusuk).

Apple Streusel Muffins

📷 by  @wwulantr Bahan topping apel: 600 g apel, kupas, potong dadu 60 g gula palem Panaskan mentega, tumis apel sampai layu. Masukkan gula palem, masak hingga mengental. Sisihkan. Bahan streusel: 100 g terigu 50 g gula palem 1/2 sdt cinnamon 80 g butter dingin Aduk semua bahan hingga berbutir. Istirahatkan di kulkas. Bahan muffin: 300 g terigu 2 sdt baking powder 1 sdt cinnamon 120 g gula 1 butir telur 180 ml buttermilk 80 g butter, lelehkan Aduk terigu, baking powder, cinnamon, gula. Di wadah lain kocok telur, buttermilk, dan butter leleh. Tuangkan ke terigu. Masukkan setengah bagian apel. Aduk rata saja. Sendokkan adonan ke papercup, beri topping apel dan streussel. Panggang 180 C hingga matang.

Muffin Tepung Beras

Cocok nih buat yang sensitif sama gluten. Kalau saya sih karena kehabisan terigu, hehe. Sedikit tips, perhatikan waktu memanggang dan lakukan tes tusuk jika permukaan muffin sudah terlihat merekah dan matang. Angkat segera jika tusuk gigi bersih atau ada sedikit remah yang menempel. Muffin akan jadi tidak moist kalau kelamaan memanggang. Muffin Tepung Beras Sumber: goodiebake.com Untuk 10 mini muffin Bahan: 60 gram mentega/margarin 50 gram gula 1 butir telur utuh 2 kuning telur 40 gram tepung beras 20 gram cocoa powder 10 gram maizena 15 gram susu bubuk Cara membuat: Kocok mentega/margarin, gula, dan telur utuh hingga pucat dan mengembang. Masukkan bahan kering dan kuning telur bergantian sambil dikocok perlahan hingga rata. Tuang ke dalam loyang mini muffin yang telah dioles margarin. Beri taburan choco chips jika suka. Panggang suhu 180 C hingga matang, 10-15 menit.

I love corn dogs! And I've been dying to make them at home. It took quite some time to finally found the affordable cornmeal on store. And these were what I tried to make first, corn dog muffins. They're not fried, they're baked. "But they're exactly like corn dogs!" the source stated. Well, not really. The fried ones are more delicious. Nice Chocolate Muffins

  These ones may not look very tempting but here's the story. I was planning on making some chocolate cupcakes for my dad's birthday. I was following this recipe when I realized I poured too much water to the batter. I halved the recipe but forgot to halved the amount of water. It was too runny. I couldn't stand wasting butter and cocoa so I did a quick recipe-switch. I remembered having successfully made muffins from pancake batter before so I turned this runny batter into one. The difference is, when you need a well-mixed batter for making pancakes, you can't do that when baking muffins. You need the batter to be lumpy. Long story short, when I tasted the result I was pretty much satisfied. They had a nice, soft and moist texture. So much better from the ones I made before. So much for a once-failed batter, don't you think? I am so gonna make them again next time so I wrote down the recipe before I forget. Nice Chocolate Muffins by Cokelatia 1/2 cups ...

Chocolate & Marshmallow Pancake Muffins

  Nice for breakfast, no mixer needed!   They are made of pancake batter, but are baked muffin-way. How to make: Mix all the dry ingredients in a bowl: ¾ cup + 1 tablespoon flour 3 tablespoons cocoa powder 1 teaspoon baking powder ¼ teaspoon baking soda ¼ teaspoon salt 2 tablespoons palm sugar In another bowl, mix all the wet ingredients: 1 egg ½ cup + 2 tablespoons (or 150 mL) milk 2 tablespoons nutella (you could double the amount for richer taste. Using peanut butter would be great too) 2 tablespoons vegetable oil Pour the wet ingredients into the dry ingredients, stir with a spoon or spatula, but not until well-combined. Better be still lumpy. Spoon the batter into muffin tins, plop some marshmallows on top. Homemade marshmallows would do well. Bake 180 C for 15-20 minutes, depending on the size of your pancake muffins. Serve warm. If you use homemade marshmallows, they would melt along with the batter, creating a nice, moist texture. Another version of muffin. This one is wonderfully moist, given by the use of buttermilk and of course the juice from the apples. And my favorite part of these muffins is the streusel which gives additional sweetness and crunchiness. I ate mine from the bottom, saved the streusel for last :) Apple Streusel Muffins Recipe

Chocolate-chip Muffin

I'm quite satisfied with this muffin recipe that I usually use, but I'm curious to try this another muffin recipe . I mean, look at the picture on that blog, what a mountain high muffin! Very tempting. It's much more simple to make, basically you just mix the dry ingredients in one bowl, the wet ingredients in another bowl, and then combine them. My muffins rise well and taste alright, moist because of the sour cream. But next time I'll stick to the first recipe. It's a bit tricky to make but I think they taste better. Rich and buttery.
