My Favorite Banana Cake
Yields: 2 medium loaf pans or 18 cm round pans.
1 cup vegetable oil
120-150 grams coconut sugar (or to your taste), finely grated/chopped
2 cups mashed banana (from about 8 medium size bananas)2 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
Preheat oven to 180 C.
In a large bowl stir oil and sugar together (I use a spatula).
Add eggs one by one, mixing along.
Add mashed banana, mix until combined.
In another bowl mix together flour, baking soda, salt, and cinnamon.
Stir in the flour mixture into the batter gradually, just until combined. Do not over mix. Pour the batter into greased/buttered pans.
Bake until golden brown and a toothpick inserted into the middle of the cake comes out clean.
Best served warm.
