#BakingWithKids: Cheesecake

Image
This is gonna be an unusually long post. There are two sessions of #BakingWithKids on our Open Kitchen this week, and both of them are cheesecakes. The first session is using this New York Style Cheesecake recipe and the second is Lori's Cheesecake . Both are great.  The first recipe results in softer, lighter, creamy cheesecake. The second recipe yields denser, sweeter, milky cheesecake. Your call. New York Style Cheesecake Modified by Cokelatia Note: The original recipe calls for sour cream. Because it is rather tricky to find, I tried using homemade buttermilk made of evaporated milk and vinegar. It worked well. Ingredients: 50 grams biscuits 20 grams butter, melted 250 grams cream cheese, room temperature 100 grams sugar 1/2 tbsp corn starch 2 eggs 1-2 tbsp freshly squeezed lemon juice a pinch of salt 250 ml homemade buttermilk Methods: Prepare homemade buttermilk: heat 250 ml evaporated milk just until before it boils. Add 1/2 tsp vinegar, stir ...

Deep Dark Fudgy Brownies

Image
This is the best brownies recipe I've tried so far! Speaking about brownies, I have two favorite recipes up till today. Good Ol' Homemade Brownies and Jamie Oliver's Bloomin' Brilliant Brownies . Now I have a new favorite! I couldn't even describe it, it's just perfect. You've gotta try this one. The method is amazingly simple! Deep Dark Fudgy Brownies Adapted from King Arthur Flour Recipe Ingredients: 85 grams cocoa 150-200 grams white sugar 60 grams confectioners sugar 3/4 tsp salt 120 grams flour 1 tbsp espresso powder 100 grams nuts (I used cashew) 170 grams chocolate chips (use real cocoa butter chocolate for best result) 3 eggs 120 ml oil 2 tbsp brewed coffee Methods: In a large bowl mix together cocoa, both sugar, salt, flour, espresso powder, nuts, and chocolate chips. Add eggs, oil, and brewed coffee, mixing just until smooth. Pour into a greased 20 cm x 20 cm or 22 cm x 22 cm square pan. Bake in...

#BakingWithKids: Super-Easy-Kids-Can-Do-It-Themselves Cookie Bars

Image
These are masterpieces of 'Superkids Rocky Bakers: Cookie Bars Party' participants. Super Easy Cookie Bars Adapted from Martha Stewart Ingredients: 85 grams butter+margarine 40 grams white sugar 40 grams palm sugar 1 egg 120 grams flour 1/2 tsp baking soda 1/2 tsp salt 70 grams chocolate chips Toppings of your choice Methods: Preheat oven to 180 Celsius. In a medium bowl, stir together butter, margarine, white sugar, and palm sugar with a spoon (yes, using only a spoon would do) until smooth. Add egg, mix until combined. Add salt, baking soda, and flour gradually, stir slowly until just combine. Add chocolate chips, stir until distributed evenly. Spread the cookie dough in an approximately 11 cm x 16 cm square pan or 15 cm round pan. Sprinkle with toppings. Bake in the preheated oven until the surface is golden and a bit crusty but the center is still gooey, about 30-35 minutes (or depending on your oven).

Cookie Bars

Image
When making cookies, sometimes I just spread the dough in a cookie sheet instead of form it into balls. It would result in moister, denser cookies. Just like how I prefer my cookies done: a bit crunchy on the edge, but very soft and slightly under baked in the center. Or bake them in fun-shaped-single-serving molds, enough to satisfy a little cookie monster.

Blueberry Crumb Cake

Image
Blueberry and crumbs on cake, yum! I used blueberry jelly instead of fresh ones, but still, yum! Next time I think I will add some peanut butter so it would be PBJ on cake. Yummm. Blueberry Crumb Cake Recipe

Chocolate Toffee & Coffee Bars

Image
It's no new stuff, I used to make this a lot in the past (even sell some). Last night I suddenly missed its taste and baked it right away, but to make it a bit different I mixed in some instant coffee powder to the batter. It tastes better, even better the next day. Worth every calories I would gain from consuming oh so many butter and sugar in every slice (not to mention the chocolate chips). But it's worth it, really! :)   Maybe you begin to wondering why I often put some unbaked stuff photos lately. That's because I barely realize that some stuff looks better unbaked. Well, what do you think? Chocolate Toffee Bars Recipe

Rocky Round

Image
In this special occasion, what would be more blessing and heartwarming than sharing your happiness with others? Especially when the happiness you share come in round shape cakes with lots of chocolate chunks all over them. With caramels and cherry, too.   This is how they look unbaked. Appealing already.   And they look like this when they come out of the oven.       Happy Eid Mubarak! :)

Bars

Image
I love making bars. Unlike cookies, when making bars you just place the batter in one pan and then cut it into bars when it's ready. No need to roll and shape. And bars usually have simple method, more simple than cake. Quick and simple! My favorite words :) Sometimes when I'm craving for cookies but don't have too much time I just spread the batter over a cookie sheet, make them bars-like. Here are some of my favorite bars. Top left: Chocolate Toffee Bars. Top right: Rocky Bars. Those are the first rocky bars I made. Bottom left: Latest version of Rocky Bars. I make them so often I know the recipe by heart (I've modified it here and there to meet everyone's appetite). All people's favorite! Bottom right: Chocolate-chip Shortbread. Yes, it has its own name, shortbread, but for me it's bars-like so I just put it here. Pennylane’s Brownies

Image
I have a friend that has the same birthday with me. To celebrate our birthday this year we decided to bake something together. It was fun! She let me choose which recipe we would try, and I had wanted to try this brownies recipe for a while. It turned out pretty good. But for me, I like the fudgy kind of brownies with chewy texture whereas this recipe is using vegetable oil and cocoa powder instead of butter and chocolate, so the result is more cake-like.
