Mango & Pineapple Pie, Step By Step

Make the pate brisee using your favorite recipe. This or this one have very detailed methods.  Mix up the filling: mango chunks, pineapple chunks, sugar to your liking, a little cornstarch, and freshly squeezed lemon juice. Pour into the base. Prepare the top crust. You could spare some time to make a lattice top if you like, or go simple like me: just make a hole in the center with a simple but cute shape. I choose star shape.

Cover the pie carefully, seal the edge. Bake until golden and the filling is bubbling (this is why we need the hole).


Now, enjoy! Warm or cold, marvelous.
