Chocolate Meringue Pie

Modified from Pennylane Kitchen

For the crust

100 grams chocolate biscuits without the cream (I used Oreos)
40 grams butter/margarine, melted

Place the chocolate biscuits in a large plastic bag, finely crush with a rolling pin. Pour into a bowl, add melted butter/margarin, stir until combined. Press into the base of a 20-22 cm round cake pan. Set aside.

For the filling

3 egg yolks
3 tablespoons sugar
4 tablespoons corn starch
2 1/4 cups milk
100 grams dark chocolate, melted
2 tablespoons cocoa

Whisk egg yolks, sugar, and corn starch together until smooth. Set aside. Heat milk until almost boiling, pour slowly into the egg yolks mixture, whisking along. Bring the mixture back to the stove, cook gently, whisking constantly, until boiling and thickens. Remove from heat. Add melted chocolate, whisk throughly. At this point, I tasted it a little and felt it was not chocolatey enough, so I add 2 tablespoons cocoa.

For the topping

3 egg whites
6 tablespoons sugar

Using a mixer, beat egg whites with medium speed. Don't use high speed when beating egg whites or they will be ruined. Once it reaches soft peak, start adding sugar gradually. Continue beating until stiff and glossy.

Pour the chocolate filling into the pan, on top of the crust. Then spread the meringue all over it, use the back of a spoon to make swirls. Bake in preheated oven at 190 degrees C until set and browned. Mine takes about 20-25 minutes.

Let cool. I served mine cold from the fridge, because I prefer it that way. Yum-yum!

Total comfort food! On every bites! Look at those three layers of guilty pleasure!

Oh, I also tried to bake some of it in a glass jar, in water bath to prevent the jar from breaking. Put the jar in a lower pan, fill the lower pan with boiling water, then put them in the oven. The height of the pan and the water surface should be less than one third of the jar height.

Ta-da! Chocolate Meringue Pie In A Jar. The meringue won't stick to the filling though, it's floating. I wonder why.
