Glazed Baked Donuts


This is actually a fried donut recipe. I tried to bake them, and it worked. Of course the baked donuts didn't taste as good as fried ones, nor as tender. But you've gotta set your priority here. The less oily ones, or the more delicious ones? 

Baked Donuts With Glaze

Ingredients

For the starter:
300 grams bread flour
10 grams instant yeast
175-200 ml water
3 grams salt

For the dough:
75-100 grams bread flour
3 grams salt
30 grams sugar
1 egg
40 grams shortening/margarine

For the glaze:
20 grams butter/margarine
1/2 cup confectioners' sugar
1 tablespoons hot water
cocoa for chocolate glaze

Methods

First, make the starter. Mix flour and yeast in one bowl, add water gradually until well combined. Add salt, knead a little with your hand until thoroughly mixed. Cover bowl with plastic wrap, let the dough rise in warm place until well risen, about an hour.

Punch the dough to let the air escape. Add the rest of dough ingredients, starting from 75 grams flour. If the dough is too sticky, keep adding more flour until no longer stick to the hand, well combined, and stretchy. Cover with plastic wrap, let it rest for 15 minutes.

Roll out the dough on a floured surface until about 1 cm thick. Cut with donut cutter or anything you have on hand. Line the donuts on a cookie sheet with enough space between them.

Heat oven to 180 degrees C. Bake the donuts until cooked and slightly browned (it won't be browned too much), 10-12 minutes. Let cool.

Prepare the glaze. Melt the butter/margarine. While still hot add confectioners sugar, stir until smooth. Add hot water gradually just until it has the right consistency. The glaze will harden when it is cooled. You could melt it again in a double boiler. Dip the donuts in the glaze until covered thinly, let them set on a wire rack.

For chocolate glaze, add some cocoa powder. I didn't measure it, I was just keep adding cocoa 1 by 1 tablespoons until it felt chocolatey enough. If the chocolate glaze is too thick add a little more hot water.

Serve immediately and enjoy!

My son loves to have his name on donuts, pancakes, anything.
