Whole wheat banana cake with rolled oats for extra fiber
We love banana cake. It would make a perfect sunday breakfast. Or brunch, or snack, or anytime. I always use a couple tablespoons of honey instead of sugar. I also substitute some of the flour with whole wheat flour for more fiber and texture.

This one is eggless. And yes, it's still resulting in a nice texture
This is the modified recipe I often use:
Whole Wheat Banana Cake

Ingredients:
1 cup all purpose flour
1/4 cup whole wheat flour
1 tsp baking soda
1/4 tsp salt
1/2 cup oil
2-4 tbsp honey (or to your taste)
2 eggs
1 cup mashed banana
1/4 - 1/2 cup rolled oats (optional)
Methods:
Combine flour, whole wheat flour, baking soda and salt. Set aside.
Mix oil and honey using a balloon whisk. Add eggs, one by one. Mix in mashed banana.
Fold in flour mixture, and then rolled oats, until just combine. Do not overmix.
Pour into oiled/buttered loaf pan. Bake until golden brown and a toothpick inserted into the middle of the cake comes out clean.
Serve warm.
Note: rolled oats can be substituted with any nuts, chocolate chips, or removed completely.
