Simple Birthday Cake

For his second birthday my son requested a chocolate cake. I modified the chocolate apple cake recipe, made it with banana instead so I could reduce the sugar amount but still get the sweetness. I made a rather thin chocolate glaze so it would just coat the cake, but not too much. The result were still too sweet for me (and my son) but well, he doesn't get glazed cake every day. And he was so happy to see and eat his birthday cake. With the happy boy Happy belated birthday, dear. I love you :)

Sugarless (And Less Butter) Apple Pie

125 grams flour 50 grams oatmeal 60 grams cold butter or margarine 2 tablespoons vegetable oil 1-2 tablespoons honey (optional) 2-4 tablespoons water 2 apples A squeeze of lemon A pinch of ground cinnamon Cut butter into small pieces, stir gently with flour, oatmeal and vegetable oil or rub with your fingers (not palm) until the mixture resembles coarse meal. Gradually add honey and water until the dough can form a ball. Add more water if necessary. Rest the dough in refrigerator. In the meantime core apples (I didn’t peel mine) and cut to your heart content. Add lemon juice, stir. Sautee the apples with a little butter or vegetable oil and cinnamon a couple of minutes until tender. Set aside. Take out the dough from refrigerator, divide in two. Roll each dough so they can fit to your pie pan (I used 30.5 cm oval spaghetti dish). Place one piece of dough, pour the apples, and then place the other piece of dough. Chocolate & Marshmallow Pancake Muffins

  Nice for breakfast, no mixer needed!   They are made of pancake batter, but are baked muffin-way. How to make: Mix all the dry ingredients in a bowl: ¾ cup + 1 tablespoon flour 3 tablespoons cocoa powder 1 teaspoon baking powder ¼ teaspoon baking soda ¼ teaspoon salt 2 tablespoons palm sugar In another bowl, mix all the wet ingredients: 1 egg ½ cup + 2 tablespoons (or 150 mL) milk 2 tablespoons nutella (you could double the amount for richer taste. Using peanut butter would be great too) 2 tablespoons vegetable oil Pour the wet ingredients into the dry ingredients, stir with a spoon or spatula, but not until well-combined. Better be still lumpy. Spoon the batter into muffin tins, plop some marshmallows on top. Homemade marshmallows would do well. Bake 180 C for 15-20 minutes, depending on the size of your pancake muffins. Serve warm. If you use homemade marshmallows, they would melt along with the batter, creating a nice, moist texture.
